It all starts with the right variety. It took some time but we found the best variety for the job. One that had a full rich flavour, that got all plump and fragrant on the vine and one that most importantly developed an even richer flavour when it was cooked and stewed.

We know our tomatoes are ready to pick when we walk past the plants and they start to give off that well known tomato aroma in the heat of the day. They are then plump enough for the picking and full of rich ripe flavour. This is the beginning of something big. Combined with homegrown garlic and an array of herbs our Passata will take you to the hills of Southern Italy.
