All Local Harvest Olives are hand-picked and soaked for the exact amount of time required for each harvest. We ferment them using salt flakes, filtered water & home made vinegar. This helps the olive to retain its natural colour and enhances its flavour.
We know our olives. We know just when they are plump enough for harvesting and we know with each harvest just how long they need to be soaked. Our methods keep the natural colour of our olives and we don’t have to add anything back. Produce grown and harvested with love and a great amount of knowledge.
