They would grow, collect, ferment and preserve excess produce, so nothing went to waste and they had it available out of season. This is our philosophy.
We are local people growing and preserving food for our communities. We dig deep, literally, reduce waste and produce food you can trust. We do the hard graft so you can reap the rewards.

Kalamata Olives

Our Kalmata Olives are harvested plump and soaked in filtered water for 10 days. They retain full colour and flavour and are fermented with the purest ingredients in a simple, old fashioned, honest way.

Tomato Passata

Our tomatoes are sun ripened on the vine and picked when they are super plump, full of aroma and perfect for preserving. Our varieties are grown for their flavour, not longevity and transportation requirements. So they taste damn good even before we start the preserving process, which concentrates and enhances their wonderful flavour.

Preserved Lemons

We use the best homegrown lemons, full of flavour and rich in vital nutrients. Prepared with an ancient method and blended with the finest sea salt and spices these preserved Lemons are so good you’ll want to eat them straight from the jar.
